Potatoes have received a bad name in recent years, due to their carbohydrate content. However, potatoes are packed with vitamins and minerals such as vitamin B6, potassium, vitamin C, manganese, phosphorus, vitamin B3, and fibre. They are also quite low in kilojoules, although that all depends on how they are prepared!
Avoid deep fried, salty potato chips and opt instead for a baked jacket potato, or boil/steam the potatoes for a potato salad.
Try to leave the skin on, as this is where many of the nutrients are found.
